I was inspired to make this dish after seeing something similar posted by a fellow foodie. These meatballs are tender and filling. One will do; maybe even just half. My hubs loved this dish and the hearty red sauce is what makes it. I hope you try it!

Lemon Ricotta Pancakes
These pancakes became a family favorite the first time I made them 7 years ago. They are fluffy, lemony and soooo tasty. And, they feel so fancy! I use low fat milk & ricotta to make these luscious, yet light, pancakes. My son asks for them everytime he is home for a visit! Serve them with fruit or just slather on some butter & drizzle with syrup.
Hearty Red Sauce
I made this one day after reading a fellow foodies Instagram post about this fab sauce. We just had a party and had a lot of left over veggies from a grazing platter and this was going to be perfect to use them up. It’s rich, flavorful and has a lovely texture. You can use this sauce as a base for a variety of Italian dishes. I’ve even used for a grilled halloumi cheese appetizer. It’s just super versatile.
Old Fashioned Chicken Soup
We had a cold wave here in San Antonio & that means my hubs will ask for this chicken soup. I got this recipe from a friend’s mom over 10 years ago. Ok, I’m lying…it was way further back than that. This soup requires stretchy pants, a fire & a comfy chair. Enjoy!
Easy Apple Galette
I have never successfully made an apple pie. I can make just about any other kind of pie, but not apple. Isn’t that weird? They always come out watery. But, an apple galette… I’ve got that down. Now, I’m pretty lucky. Our local grocery sells products created by the Texas Pie Company located in Kyle, Texas. So, I just use one of their frozen pie dough pucks to make my galettes and pies. And, that’s what makes this a super simple recipe and 99% fool proof. I hope you try it!

This recipe has been a family favorite for years. I first found it in my 1989 Southern Living Annual Cookbook. I’ve made a few tweaks over the years for ease of preparation. This chicken is flavorful, rich and impressive. I served it with Mustard Roasted Potatoes and a simple salad. You will love this recipe!

This recipe is from Ina Garten. I found the original recipe on the Food Network website. I made a few changes for ease of preparation. They got rave reviews from our dinner guests during a recent get together. They just have a kind of fancy feel to them. Enjoy!

Chocolate Mousse Ice Box Cake
My mom made this dessert every year for Christmas as far back as I can remember. According to her notes, it’s a Betty Crocker recipe from the 1970s. The title of the recipe talks about it being a “make ahead dazzler.” Don’t you just love that?! Believe or not, I’ve never made it. Until, this year… When I served it the other night, both my son & my husband said it was just like they remember it from when my mom would make it. I hope you try it and make your own memories.
Disney Crystal Palace Breakfast Lasagna
If you have ever been to the Crystal Palace restaurant at the Magic Kingdom, you’ve likely tried this amazing breakfast casserole. There are many renditions of this recipe floating around online. My version captures what we remember about our Disney World visit. We serve this every year for Christmas breakfast. It’s a little labor intensive, but so worth it!
