It’s peach season in Texas! We had a late freeze, so the peaches are sticking to their stones. The taste was not effected – they are sweet & fragrant. Just perfect for this simple galette. Glad I grabbed some of these beauties.

Fredericksburg Peach Galette

Yield: 8 Servings

Fredericksburg Peach Galette

Ingredients

  • 1 Texas Pie Co. Pie Dough Puck at room temperature, or your favorite pie dough (sold at my local grocer – HEB)
  • 3 cups peaches, sliced (I used Fredericksburg peaches – they are on the smaller side, so I used 5 peaches)
  • 1/4 brown sugar
  • 1 TBS flour
  • 1 egg for egg wash
  • Sliced almonds & sugar to sprinkle of the crust

Instructions

  1. Preheat oven to 400 degrees
  2. Line baking sheet with parchment paper
  3. In a bowl toss sliced peaches with sugar & flour. Set aside.
  4. On a floured surface, roll out dough to 12-14 inch round. Transfer to prepared baking sheet.
  5. Arrange peaches in the center, leaving a 2 inch border to fold over and around the peaches. Fold the border over the filling, pleating the edge to make it fit. The center will be open.
  6. Brush crust with egg yolk and sprinkle with almonds and sugar
  7. Bake for about 45 minutes or until crust is golden brown

The Poteet Strawberry Festival is this weekend & I’m dedicating the rest of the week to this small town’s award winning berries! I mean, I’ve got to because last week I bought a flat. And, in case you’re not up on your agricultural measurements a flat equals 12 pints (or hallocks) of strawberries. We ate this yummy galette, but the rest of the yummies I’m posting this week went to my hub’s & daughter’s work. Lawd, that was a lot of strawberries.

Poteet Strawberry Galette

Ingredients

  • 1 pie crust (I used the Texas Pie Co. Pie Dough Puck sold at HEB)
  • Parchment paper
  • For Filling:
  • 2 pints of strawberries, washed & sliced
  • 1/2 pint blueberries, washed
  • 2 TBS flour
  • 1/8 cup sugar
  • For Finishing:
  • 1 egg & a splash of heavy cream
  • Sugar crystals or regular sugar

Instructions

  1. Preheat oven to 425 degrees
  2. In a large bowl, add the prepared strawberries, blueberries, flour and sugar. Gentle stir to coat and set aside.
  3. Sprinkle some flour on a sheet of parchment paper. Roll out dough so that it is about 12-14 inches in diameter. Slide the dough onto a baking sheet or pan.
  4. Spoon berries in the center. I always choose a few pretty berries to place on top. Make sure you have about 1.5 - 2 inches of dough left on the sides to fold over, around all the fruit.
  5. In a smal bowl, mix the egg & heavy cream. Brush on the folded over dough. Sprinkle dough/egg wash with sugar crystals or sugar.
  6. Place galette into middle of oven, and bake for 20-25 minutes or until crust is beginning to brown and fruit is bubbling.
  7. Remove from oven and cool. I serve it with ice cream or whipped cream.

The danger of going to Costco is that your gonna come home with a boatload if whatever you buy. In my case, it’s plums! I’m gonna be makin’ plum everything, this week… Today, it’s a PLUM GALETTE – tart & sweet = yummy. And, of course, made easy by using the Texas Pie Original Pie Dough Puck. Gotta go! It’s time for dessert

Ingredients

  • 5-6 plums, pitted and sliced about 1/4 thick
  • 1/4 cup sugar
  • 1 TBS flour
  • 1/2 tsp cinnamon
  • 1 tsp orange zest
  • Dash salt
  • Squeeze lemon quarter
  • Texas Pie Original Pie Dough Puck or pie dough of choice
  • Egg wash & sugar for finishing

Instructions

  1. Preheat oven to 400°F
  2. Combine the first 7 ingredients in a bowl
  3. Line a cookie sheet with parchment paper & sprinkle with flour
  4. Place the dough puck on the sheet & roll out into a circle about 1/8 inch thick.
  5. Place the plum filling in the center, leaving a 2 inch border of dough.
  6. Fold the dough up and over the filling, so it covers at least 2 inches of the filling, or more. Brush the edge with egg wash & sprinkle with course sugar.
  7. Bake for 30 minutes, then turn the oven down to 350°F and bake for an additional 30 minutes. Crust should be golden brown. Once removed from oven, let the galette rest for at least 30 minutes before serving.

I just love this galette. I made it a few weeks ago when we had friends over. They were so impressed! The dough I use is so flaky and the fruit tastes just sweet enough, but not too sweet. It is sooooo satisfying. And, it looks beautiful. Oh, and I love the crunch of the sliced almonds.

  • 1 HEB Texas Pie Company Original Pie Dough Puck at room temperature, or your favorite pie dough
  • 2 large peaches slices about 1/4 of an inch in thickness
  • 1/4 cup blueberries
  • 1/4 cup brown sugar
  • 1 TBS flour
  • 1 egg for egg wash
  • 1/4 cup sliced almonds optional

Instructions

  1. Preheat oven to 400 F degrees
  2. Line a baking sheet with parchment paper
  3. In a bowl, toss the peaches, blueberries, sugar and flour together
  4. On a floured work surface, roll the dough out into a 12-14 inch round. Transfer to prepared baking sheet.
  5. Arrange the peach mixture over the dough, leaving a 2-inch border. Fold the border over the filling, pleating the edge to make it fit. The center will be open. ~ Brush crust with egg yolk and sprinkle with almonds and sugar.

Ingredients
  1. 6 apples, peeled, cored and cut into 1/4 inch slices
  2. 1/2 cup brown sugar
  3. 1 TBS flour
  4. Pinch salt
  5. 1/2 teaspoon cinnamon
  6. 1/4 teaspoon lemon zest
  7. 1 @HEB Texas Pie Company Original Pie Dough Puck at room temperature, or your favorite pie dough
  8. Egg wash (egg mixed with 1 tablespoon water)
  9. Sugar to sprinkle on the crust
Instructions
  1. Preheat oven to 400°F
  2. Mix the prepared apples, brown sugar, flour, salt, cinnamon & lemon zest together in a bowl. Set aside.
  3. Line a cookie sheet with parchment paper & sprinkle with flour
  4. Place the dough puck on the sheet & roll out into a circle about 1/8 inch thick
  5. Pile the apples in the middle of the dough
  6. Fold the dough up and over the filling, so it covers at least 2 inches of the filling, or more
  7. Brush the edge with egg wash & sprinkle sugar over the edge
  8. Loosely tent the top of the galette with foil (so the apples cook)
  9. Bake for 30 minutes, then turn the oven down to 350°F and bake for an additional 30 minutes. Remove the foil for the last 15 minutes to brown the top.
