The warmer weather in Texas, has us wanting to hang on our back porch and eat outdoors. These tender beef skewers were marinated in a soy sauce and ginger based marinade for several hours. Then the hubs grilled them on our gas grill – simple & delicious!

I served this at my Oscar Party for 2 (me & the hubs) & it was a hit! This is the first time I’ve made hummus, so it took a little tweaking as I went along. My version was smooth, creamy and a little tart. I served it with pita chips & was it ever good! I don’t think I will ever be able to go back to store bought hummus ~ seriously! It was that good.

Laissez les bons temps rouler! Qui, cher! It’s Mardi Gras & I’m channeling Arnaud’s with this  CARNIVAL COLADA. And, since its Fat Tuesday, I’m enjoying this La Panaderia Kings Cake Rosca with my cocktail! I love that the official colors of Mardi Gras stand for Justice ~ Power ~ Faith. By the way, this cocktail is on the healthy side. It is made with unsweetened almond milk, pineapple juice, coconut rum & Suncore butterfly pea flower super powder for the pretty purple color.

The highlight of my Oscar Party for (me & the hubs), last Sunday ~ JUMBO SHRIMP & PINEAPPLE KABOBSI seasoned the skewers with olive oil, lemon, paprika, sea salt & cracked pepper. Just serve with a squeeze of lime! The hubs grilled them & they were divine!!!! So simple!!!!!

This one pan dish is awwwwwwsome! It is outstanding for meal prep or for a large family meal. Now, forgive me ahead of time… I’m using one of my fav foil pans. I just can’t stop! It’s a gorgeous day in San Antonio & this breakfast just shouts GOOD MORNING!!! These BREAKFAST TOSTADOS are our version of toast, around here! I used a blow torch to crisp up these yummy corn tortillas, added some cheese, avocado & a sunny side up egg. Topped it all with pretty watermelon radishes, sprouts, cilantro, tomatillo salsa & Humble House Guajillo & Red Jalapeño Aged Tangy Garlic Sauce.
