Trying to eat a little lighter this week & this meal did the trick! So easy ~ combined crushed garlic, lemon, S&P and olive oil that was then drizzled on the veg. Roasted it all on a lined pan at 450 degrees for 25-30 minutes. Hubs smoked the salmon on our Bug Green Egg for around an hour at 300 degrees, until the internal temp was 150 degrees. Enjoy! I’m making a cold salad bowl with all this yumminess, in a day or 2. Two meals in one!!!

Any of y’all still get the paper? There’s just something about enjoying your morning coffee & breakfast w/the smell & feel of a real newspaper. On my Instagram post, someone even suggested it is romantic. I agree! BREAKFAST is SPROUTS, instead of hash browns, 2 slices of BACON, a gorgeous thick slice of TOASTED MARBLE RYE, and a SUNNY SIDE UP EGG topped with RED JALAPEÑO TANGY GARLIC SAUCE (ain’t that a mouthful)! A superior way to start the morning ~ real food & a real newspaper!

BREAKFAS

These oats are just what you need on the gorgeous crisp morning! Prepared steel-cut oats according to package directions and added 1/2 of a Granny Smith apple (baked & mashed), 2 TBS Treehive Maple Syrup + Honey & a dash of cinnamon. Topped it all with my homemade & healthyish pecan crumble, hemp seeds, goji berries, crunchy apple slices, maple almond butter, and, what made it really awesome ~ a drizzle of Picnik butter creamer (no sugar, keto friendly). HOW TO for BAKED APPLE & PECAN CRUMBLE is below:

BAKED APPLE ~ Preheat oven to 375 degrees. Line a small pan with foil. Place 1 TBS of coconut oil & a dash of cinnamon on the pan & melt while oven is preheating. Cut apple in half & brush melted oil on all sides of apple. Place apple face down on pan. Bake for 15 minutes or more, until apple is mushy. Scoop out apple & add to oats.

PECAN CRUMBLE: 1 cup rolled oats, 1/4 chopped pecans, 1/2 tsp cinnamon, 1/4 cup brown sugar, 2 TBS coconut oil ~ Place dry ingredients in large bowl & combine. Add the coconut oil & use a fork to mash & mix until the coconut oil is evenly distributed. Put in a small baking dish and bake at 350 degrees for 20 minutes. After 10 minutes, turn the mixture and return to the oven. This is also delicious in baked apples or pears. Cover & keep in the fridge for 2 weeks.

Aren’t these English Muffin PB&J Loaded Toasts givin’ off an adorable VALENTINE VIBE?! These fab muffins are from one of our local bakeries & the homemade Strawberry Rhubard Jam is all mine! AND, Uh Oh!!!! I’m down to my last jar of Poteet strawberry jam! Thank goodness strawberry season is around the corner! I digress…This simple concoction is topped with fresh & frozen berries and black chia seeds. Only more day & it’s Valentines Day 2019!
