What a great way to start the morning! Topped w/sea salt, a little olive oil, cracked pepper & red pepper flakes made this a fresh & satisfying brekkie! And, the fresh, traditional white toast was perfect! Have a wonderful Saturday, everyone!

Toasted Brie Sandwich w/Apple Pear Compote
It’s Friyay, y’all!!! I made this yummy toasted sandwich a couple of weeks ago, using honey wheat bread & the compote I made with my Christmas fruit basket bounty. I was able to use that compote for my porridge, on ice cream & this sandwich! I felt so good keeping my promise to reduce food waste. You can find the recipe for the compote here: Apple Pear Compote
Shrimp, Avocado, Kumato Tomatoes, Red Onion & Italian Parsley Bowl
This bowl tasted so good after all the rich food I had in NOLA! Just drizzled some olive oil, a squeeze of lime & a bit of sea salt and cracked pepper. Served with old school saltines. Happiness in a bowl!
Shakshuka (Eggs in Tomato Sauce)
Made this savory stove top tomato & egg dish, last week. SHASHUKA is a simple North African dish of eggs cooked in tomato sauce. I made the tomato sauce with cherry tomatoes I had leftover in the fridge & some marinara I froze. Served it with crusty bread & it was oh so satisfying!
Tuna on Toast
I used French sourdough for these open-faced treats! For the tuna, I mixed albacore tuna, mayo, hard boiled eggs, squeeze of lemon, minced celery hearts & onion, julienned carrots, a touch of mustard & chopped dill. Completed this yumminess w/some peppery arugula & a few more carrots!!!

Nine Grain Toast w/German Sugar Beet Syrup, Bananas & Hemp Seeds
My mom, who was from Mettmann, Germany, loved German sugar beet syrup. Before the internet was big for online purchases, we would rice to Austin to purchase a case at a time, from a specialty shop that could get this liquid gold. My mom used to make toast, slathered w/butter & this good stuff! Today, I’m sharing the updated version. I still put butter, but the banana and hemps seeds were a perfect compliment. Ich bin so froh, dass ich @Graschaftenr Zuckersirup online bestellen kann. Es schmeckt wie ein kleines Stück Deutschland.
Savory Porridge w/Avocado, Greens & a 7-Minute Egg
I love to get inspiration from Instagram and Pinterest. The savory oats @clemfoodie posted a few days ago made my mouth water! So, here is my version of SAVORY PORRIDGE w/GREENS, AVOCADO & a 7-MINUTE EGG. It turned out so creamy, and was satisfying enough for dinner. The hubs loved it, and hubs is not the biggest fan of oatmeal. I think I have a convert!
Oats w/Citrus Turbinado Sugar, Berries & Cacao Nibs
Good Morning Peeps!!! I made this bowl with steelcut oats + almond milk, sweetened with the dried citrus turbinado sugar from my citrus drying project (a couple of weeks ago.) Topped it with cape gooseberries, raspberries, hemp seeds, cacao nibs, @suncore white dragon fruit chips, and hot, melted @Justin’s maple almond butter. Yummy!
Smoked Pork Loin
SMOKED PORK LOIN is an impressive entree. My hubs smokes it & it is delish! I served this luscious slab of lean pork for a family dinner in December. It was sooooo good with Twice Baked Potato Casserole & my Hatch Chile & Chicken Casserole. Yums!!!
