It’s Friyay, y’all!!! I made this yummy toasted sandwich a couple of weeks ago, using honey wheat bread & the compote I made with my Christmas fruit basket bounty. I was able to use that compote for my porridge, on ice cream & this sandwich! I felt so good keeping my promise to reduce food waste. Made this savory stove top tomato & egg dish, last week. SHASHUKA is a simple North African dish of eggs cooked in tomato sauce. I made the tomato sauce with cherry tomatoes I had leftover in the fridge & some marinara I froze. Served it with crusty bread & it was oh so satisfying!

I used French sourdough for these open-faced treats! For the tuna, I mixed albacore tuna, mayo, hard boiled eggs, squeeze of lemon, minced celery hearts & onion, julienned carrots, a touch of mustard & chopped dill. Completed this yumminess w/some peppery arugula & a few more carrots!!!

My mom, who was from Mettmann, Germany, loved German sugar beet syrup. Before the internet was big for online purchases, we would rice to Austin to purchase a case at a time, from a specialty shop that could get this liquid gold. My mom used to make toast, slathered w/butter & this good stuff! Today, I’m sharing the updated version. I still put butter, but the banana and hemps seeds were a perfect compliment.  Ich bin so froh, dass ich @Graschaftenr Zuckersirup online bestellen kann. Es schmeckt wie ein kleines Stück Deutschland.

I love to get inspiration from Instagram and Pinterest. The savory oats @clemfoodie posted a few days ago made my mouth water! So, here is my version of SAVORY PORRIDGE w/GREENS, AVOCADO & a 7-MINUTE EGG. It turned out so creamy, and was satisfying enough for dinner. The hubs loved it, and hubs is not the biggest fan of oatmeal. I think I have a convert!
