When you buy a giant tub of spinach at Costco…you make lots of spinach foods! YOU will be sooooo happy if you make this savory toast! The jammy 7-minute eggs on top of perfectly cooked spinach & mushrooms is total bliss. The sourdough was just the right choice for this yummy toast & the sprinkle of EB seasoning & some red pepper flakes sealed the deal!

Gingerbread Pancakes with Ginger Plum Compote
The Sugar Plum Fairy is in the house! Pancakes in the House! At least that’s what I was thinking of when I made this gingerbread concoction, this morning! You will L O V E these pancakes topped with warm Ginger Plum Compote! Created this recipe all by lonesome!
Cherry Bourbon Smash
I’m loving this FIZZY CHERRY BOURBON SMASH in this tall glass. When I saw fresh sweet cherries at the grocery store, I just knew I was gonna make this! Muddle 2 TBS sugar, 8 pitted cherries & the juice of one lime in a shaker. Add 4 ounces of your favorite bourbon, 4 ounces of cherry juice & some ice and shake. Strain into 2 tall glasses & top with ice & club soda. Garnish w/some cherries with the stem on. Makes 2 drinks. Cheers!
Spinach & Arugula Salad w/Strawberries, Avocado and Grilled Chicken
Is it ok if I call this Christmas Salad?? It just looks so cheery. in addition to the main ingredients, I added sliced red onion, pecans, and used a blush wine vinaigrette. It was so refreshing on this wet & gloomy day in Texas! It’s a great side, but when you add the grilled chicken it’s a meal! Yummmmm!
Penne Pasta w/Grilled Chicken, Chicken Sausage, Butternut Squash & Spinach
Check out our dinner from this evening! I’m super proud of this meal, y’all! You will love the sauce, and the chicken & apple smoked sausage makes it just a little different. It was a yummy combination! Plus, I used some leftover roasted butternut squash I had on hand! Enjoy!
Plum Galette
The danger of going to Costco is that your gonna come home with a boatload if whatever you buy. In my case, it’s plums! I’m gonna be makin’ plum everything, this week… Today, it’s a PLUM GALETTE – tart & sweet = yummy. And, of course, made easy by using the Texas Pie Original Pie Dough Puck. Gotta go! It’s time for dessert
Chocolate Waffles w/Balsamic Cherry Compote
My mom’s waffle maker has been calling my name ever since I got back from our trip to NYC. It’s a vintage Sunbeam that has to be at least 70 years old. It makes the best waffles! So, I made these CHOCOLATE WAFFLES WITH BALSAMIC CHERRY COMPOTE, this morning. Wow. Wow. Wow. I finished them with a dollop of vanilla yogurt, cacao nibs & a dusting of powdered sugar. Got my inspiration from Olive & Mango and it was well worth the effort. Made a few changes to the recipe to make it a little less complicated for me. (Took me 45 minutes, start to finish) You need to make these ASAP ~ this combo is beyond scrumptious.
Roasted Butternut Squash Kale Sauté
This kale recipe takes this leafy green to whole new level. The balsamic vinegar is the key. Side note about the kale – if you have been following me, you know I bought a big bag of triple washed & prepared kale at the beginning of the week. I got 3 meals out of that sucker! Back to my meal this evening – the hubs grilled a NY strip steak to go with this lovely dish. A perfect combo!

Kale Salad w/Orange Sections, Avocado & Grilled Chicken
My giant bag of kale has been put to good use! This salad has orange sections, persimmon, avocado, crushed walnuts and grilled chicken. I dressed the kale with a Tahini Vinaigrette (tahini, olive oil, white wine vinegar, 1 crushed garlic clove & sriracha) when I got home, and then prepared the add ins ~ makes the kale nice & tender. I feel super healthy!
