This is a yummy side or main dish. I served this with grilled chicken (Thanks Hubs!) & jalapeño naan that I got from our local grocery store. Gotta say…this was both healthy & delish! Feeling great already!

Strawberry Rhubard Jam
After a week in NYC, I’m so happy to be back in my own kitchen! Still tired, so I had groceries delivered. Breakfast is toasted sourdough bread with peanut butter & my HOMEMADE POTEET STRAWBERRY RHUBARB JAM. I make this jam, every year, when Poteet strawberries are in season. Poteet, Texas is the strawberry capital of the world, don’t ya know!
Greens with Shrimp, Avocado, Red Onion & Walnuts
This was a new addition to our Thanksgiving dinner. Everyone loved it! I used Trader Joe’s Power Greens, sliced red onion, avocado, walnuts, pomegranate arils & fresh shrimp with olive oil & lemon vinaigrette.
Roasted Rainbow Carrots
My fam loves these Roasted Rainbow Carrots and so do I! So simple to make – just roast your carrots in a 425 degree oven for about 30 minutes or until tender. Drizzle with honey – my favorite is Tree Hive Maple Syrup + Honey – and pomegranate arils & pistachios. These carrots are gorgeous and yummy!
Thanksgiving Stuffing
This STUFFING is life. Of course, you can call it dressing, too. Whatever floats your boat! I got this recipe from a friend’s dad at least 35 years ago. The first time I tried it I was hooked. My kids would actually put a hit out on me if I stopped making this for turkey day. It’s that good. Shhhhh…the secret is the shredded chicken. Put this on your list for next year!
Pumpkin Ricotta Pancakes
I’m just not ready for Christmas! I still want to smell pumpkin spice & enjoy my fall decor! I love this time of year so much that one year I lost my mind and made over 100 chenille pumpkins! Anyway, I digress. I made these gorgeous pancakes for breakfast & the fam loved ‘em! AND, I’m really proud, ‘cause I created this recipe all by my lonesome! This stack of hot pumpkin yumminess was, according to my daughter, was “just right.” The drizzle of Tree Hive Maple+Honey didn’t hurt, either. A perfect Thanksgiving week treat!
Easy Apple Tarts
My hubs loves anything with apples! YOU will love how simple this EASY APPLE TARTS are to make! I made a couple of tweaks to an Ina Garten recipe I saw on Food Network. All you need is some store bought puff pastry, some apples, butter & any jam you might have in the fridge! My version looks a little rustic. I still think they look pretty!
Apple Whiskey Sour
Shaken, not stirred. Instead of wine Wednesday, how about shaking it up, literally?! This take on a classic cocktail is just right for Thanksgiving. And, since you probably have some apple cider in the fridge, why not imbibe in this loveliness! Cheers!
Fig & Mozarella Di Bufala Salad
After a weekend of pretty heavy eating, I was in the mood for something light & fresh! I used Trader Joe’s Power Greens (kale, chard & spinach), sliced fresh figs & red onions, walnuts and Bud Creamery mozzarella di bufala that I kind of tore up, by hand. Drizzled it all with some olive oil, lemon juice, sea salt & fresh cracked pepper. And, voila! Fig & Mozzarella Di Bufala Salad! Hubs cheated & grabbed a slice of sourdough he spotted on the counter, though!
Organic Pumpkin Flan (or not)
I’m not gonna lie. I’m not strictly organic & I really love butter, so it’s not one of those “healthy” recipes out there. Doesn’t mean I can’t dabble… So, today I present ORGANIC PUMPKIN FLAN. Just could not pass up a can of organic pumpkin purée I saw when was shopping at Whole Foods. I immediately thought of this recipe & grabbed the organic whipping cream, too. This flan is so easy & so GOOOOD! Maybe for Thanksgiving???
Oh, and obviously, this can made with organic ingredients or not. Enjoy!
