I’ve made so many versions of banana bread, but this one has to be my favorite! It’s so moist and I love the cinnamon surprise in the middle. Just know if you make it, you better hide yourself a slice because it’s going to be gone before you can even get it out of the pan.

Homemade Granola
My sister-in-law gave us some of her homemade granola for Christmas. It was so yummy, I had to get the recipe. I made a few tweaks, like switching from canola oil to coconut oil. Sent my son a big batch to his office and he said everyone said it’s addictive. So, there you have it. Healthy & addictive.
Mini King Cake
King cakes are synonymous with Mardi Gras! I decided to make my own using store bought pizza dough. They taste homemade, but without all the effort! Just add purple, green & yellow sparkle sugar and you’re good to go! Laissez les bons temps rouler! Qui, cher!
Baked Rice Samosas
I made these crispy samosas as part of a collaboration with a group of international food bloggers. Since I’m from Texas, I decided to fill them with Mexican rice. The flavors of the spicy rice, onions, peppers & peas were perfect for this typical Indian dish. The Tex Mex flair really worked! They were easy to make with store bought phyllo dough. And, even tastier with a side of salsa. These are definitely going to be added to my party appetizer list. The filling possibilities are endless! I used my Mexican Rice recipe and it was delish. Dig in, y’all!
Falafel Bowl w/Mediterranean Couscous Salad, Edamame & Green Tahini Sauce
This gorgeous bowl has all the goods! The Mediterranean Couscous Salad has tomatoes, cucumber, feta cheese, olive oil and mint from my garden. The falafel and edamame were the perfect toppers! What took it over the top? The Green Tahini Sauce! Now, don’t mind me, I’m going to sit on my back porch all by my lonesome & enjoy this bowl!
Super Moist Cornbread
This amazing cornbread is from my 2010 Southern Living Annual Recipes cookbook. It is hands down the best cornbread I have ever made. Once I used this version of cornbread, I have never found a recipe that can top it. I made a slight tweak because I can no longer find self-rising white cornmeal mix. My family loves this cornbread so much that they ask for it for Thanksgiving dinner.
Cherry Pound Cake
This is one of my favorite recipes from my collection of Southern Living Cookbooks. I just love the cherry flavor and pink color. The original recipe calls for cream cheese frosting, but I think that’s just too rich. I prefer a little icing made from powdered sugar, maraschino cherry juice and milk. This is such a cute cake to make for Valentines Day or Easter.
Mexican Rice
Mexican rice is so flavorful and with a little prep, very easy to make. The trick is to sauté the green pepper, onion and garlic in oil prior to adding the rice. It really enhances the flavor of the rice. I love to serve this rice with smoked meats, in addition to other traditional Mexican dishes.
Raspberry Rose Almond Milk
This light & refreshing homemade almond milk is so yummy in chia pudding and overnight oats. The sweetness of the rose syrup & raspberries makes a lovely addition to my almond milk repertoire.
Hot Chocolate w/Coconut Cream
National Hot Chocolate Day found the right date to park, this year ~ the entire northern part of the US is below freezing! Wow! This twist on a favorite is sure to warm you up! I added organic coconut condensed milk and it is mind blowing how awesome this is! Get cozy and try it!
