Apple Gooey Cake

This cake is a family fav and so worth the trouble. It’s got two steps, but otherwise is very straight forward. It feeds a lot of people, mostly because it is quite rich. A small portion goes a long way!

Apple Gooey Cake

Ingredients

  • Cake:
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 cup unsalted butter, melted
  • 2 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup buttermilk
  • 1 Granny Smith apple, finely chopped
  • 1/2 cup chopped pecans
  • Cream Cheese Topper:
  • 1 (8 oz.) cream cheese
  • 2 eggs
  • 3 cups powdered sugar
  • 1/4 cup oatmeal

Instructions

  1. Preheat oven to 350°.
  2. Grease a 9×13 pan.
  3. Mix dry ingredients (flour, baking soda, salt & cinnamon) & set aside.
  4. Melt butter and place in a large bowl.
  5. Mix in sugar, vanilla & eggs.
  6. Add in buttermilk and mix.
  7. Now, add in the flour mixture & mix thoroughly.
  8. Fold in chopped apples & pecans.
  9. Spread in prepared pan and set aside.
  10. Now make your cream cheese topper. Beat the cream cheese & eggs.
  11. Add in the powdered sugar & oatmeal. Beat until smooth.
  12. Carefully spoon over the cake batter.
  13. Bake for 45 minutes until lightly golden on top.
