Viva Fiesta! This traditional Tex-Mex queso is made with creamy & smooth Kraft velveeta cheese. I like to elevate my “queso” by using fresh tomatoes, onion, jalapeños & a bit of white wine. If you’re a purist, you eat this molten liquid gold, as is, with seasoned tortilla chips. If you are feeling adventurous, you can add a scoop of picadillo or chopped brisket. In our family, we often add cooked & crumbled sausage. Pretty much anything goes! Any way you choose to consume a bowl of this addictive concoction is fine with me! Enjoy!

Carrot Cake Pancakes w/Cream Cheese Frosting
Happy Easter!! These pancakes were on the menu at our blended family Easter Brunch. I tested out these pancakes on the hubs last week and he loved them ~ they are loaded with shredded carrots, banana, coconut & pecans. I topped them with cream cheese frosting, syrup, more coconut and a Lindt mini chocolate bunny. Yummilicious!
Homemade Tartar Sauce
I was introduced to this tartar sauce by a work colleague many, many years ago. It has been my go-to condiment for fish and shrimp, ever since. It is so easy and tastes so much better than store bought. Try it and let me know what you think the next time you serve fish or your fav seafood. You’ll be hooked. Pun intended. I like to use creole seasoning to season this family fav. It gives this sauce a little kick.
Spring Hay Stacks
These sweet and savory treats are effortless to prepare, and an Easter tradition in our house. Simply melt white chocolate bark, and add peanuts, crushed pretzel sticks & pastel mini marshmallows. I sprinkled them with Fancy Sprinkles for a little bling.
Income Tax Cocktail
Are you celebrating a large refund, crying over what you owe, or just a CPA that’s happy tax season is over? This is an awesome cocktail to imbibe in no matter where you fall. This cocktail dates back to the 1920s and you can find many versions of the recipe. They all have gin, vermouth & fresh orange juice. The recipe also calls for bitters, which was thought by many to be a nod to the bitterness of giving away a portion of your hard-earned cash to the government. I tested several recipes before deciding on this one from mr boston drinks ~ it’s delicious & tastes like an artisan cocktail from Hotel Emma (San Antonio’s premiere boutique hotel). Just sayin’.
Blue Butterfly Pea Latte
I can’t adequately describe how lovely this breakfast made me feel. So simple ~ a 7 1/2 minute jammy egg sprinkled with salt flakes and a low fat milk butterfly pea superjuice powder latte. I used my Nespresso for the hot milk. And, how about my plate & tea cup? My mom had friend from England that would bring her a set like this every time she went to London for a visit. I now have them displayed as a memory of my mom & her friend. Such a sweet and happy little breakfast.
Pan Salmon, Caramelized Veg & Cauliflower Gnocchi
This pan meal is outstanding. The caramelized veggies, tender salmon and fluffy gnocchi made for an especially easy and delicious meal. You should thank me profusely for making this, and for working the bugs out of the prep for you. I used purple cabbage, colored bell peppers and green onions. This one here is a winner!
Roasted Rainbow Carrots w/Lime Tahini Sauce
And, now carrots…After all my strawberry recipes, here’s something totally different. I served these with my Asian Anticuchos a few weeks ago & the hubs really liked ‘em! The tahini sauce I created for these guys is fab! What are you waiting for? Make these carrots, STAT!!
Strawberry Thyme Smash
You didn’t think I’d get through this strawberry extravaganza w/out posting a cocktail did you???I used my Vanilla & Thyme Roasted Strawberries as the base for this refreshing cocktail. The lemony & minty tones of the thyme was perfect for this cocktail. Just muddle a spoonful of roasted strawberries, add a squeeze of lemon, a shot of vodka & lots of crushed ice. Give it a little sparkle by topping it off w/a splash of ginger ale or bubbly. It’s berrilicious!
Vanilla & Thyme Roasted Strawberries
This luscious pan of roasted strawberries was incredible. It is so versatile – I put these strawberries on my French Toast, made a cocktail & used it for a yummy parfait. What would you make with these roasted strawberries?? I found this recipe on Instagram @gatherandfeast – I could not find the recipe on her blog, so I have attached a printed version with some tweaks from my own experience making these fabulous strawberries.
