We are still suffering from cedar fever over here, so I immediately thought of this Moroccon soup. I recently had a version of this brothy loveliness at a cute little restaurant up in Blanco, Tx. I did some research and “HARIRA” is a traditional SPICY MOROCCAN SOUP served to break a period fasting. I’m serving it to get us well, plus I just love lentils!!!! I also added grilled chicken sausage (Thanks hubs!)

Cranberry Banana Bread
Merry Christmas! I had a a bunch of leftover cranberries and thought that adding them to some banana bread might be kind of festive. The bread turned out great, and with the sugar glaze and walnuts I added to the top it was extra special. A perfect side to add to my Christmas breakfast!
German Pancakes
Merry Christmas Eve! My mom always hosted Christmas Frühstück (Breakfast) for our family. I have kept up the tradition, adding & refining our menu, each year. A staple is & always will be her GERMAN PANCAKES. They are really like a crepe ~ very thin & light. I served these crepes w/plum compote, cherries & syrup. Fruit & jam are also lovely additions. Fruitcake Cookies w/Lemon Drizzle
The first time I made these my hubs was like, “Fruitcake cookies? Not sure about that.” Once he tried them, he was hooked! They are so light & so tasty! And, the lemon drizzle ~ YAAAS!!!!
Cheese Enchiladas con Papitas (Potatoes)
Christmas & New Year’s Eve would not be the same without Cheese Enchiladas Con Papitas (with potatoes). They are really easy to make & are sooooo delicious! I serve them with avocado & cilantro. Add some Mexican rice and beans, or serve as is. I served them w/ tamales on the side, but that’s just what we do here is SATX. Happy holidays y’all!
A couple of things that I do that I feel helps out with the calories and makes these easier to make…. For one, I use cooking spray to soften and heat the corn tortilla, instead of heating oil and dipping each tortilla. That is labor intensive & adds a ton of calories. So unnecessary! I also doctor up canned enchilada sauce – you really can’t go wrong and it is a lot less work. And, honestly, more delicious!

Christmas Chocolate Chips Cookies
Aren’t these the sweetest looking cookies. I used my usual recipe for Chocolate Chip Cookies and simply sprinkled with red and green sugar crystals. My recipe for chocolate chip cookies will ensure you have moist, fluffy cookies, because I learned a long time ago to switch out butter for shortening. I used butter flavored shortening for this batch! Enjoy!
Toast w/Blistered Tomatoes, Mozarella & Avocado
Merry Toast Tuesday! How ‘bout these LOADED TOASTS?! Blistered toms, mozzarella, avocado & sliced red onion on olive oil & garlic brushed @broadwaydailybread sourdough. A little fresh basil, drizzle of EVOO, EB seasoning, ground pepper & red pepper flakes complete this festive Toast Tuesday dinner!

I’m really loving this baked penne pasta. I tweaked an Ina Garten recipe I found on Food Network and it’s soooooo good! My family is not crazy about parmesan cheese or yogurt, which is in the original recipe. So, I reduced the amount of parmesan and used ricotta, instead. I also added shredded mozzarella cheese, because we love cheese!!! My granddaughter loves this stuff and asks for it all the time! Oh, and for your reference I included the link to the original recipe. Enjoy!
S’mores Pancakes w/Bananas & Marshmallow Whipped Cream Filling
These pancakes are a perfect holiday treat! Stack ‘em high with marshmallow whipped cream & plenty of cacao nibs between each layer. The bananas & cacao nibs make thsee cakes taste just like you are sitting around a camp fire, except you are in the comfort of your cozy kitchen. Decadent & delicious.
Oatmeal with Ginger Plum Compote
Good Morning!!! Breakfast today is porridge made with Bob’s Red Mill steel cut oats prepared with vanilla almond milk. I topped it with the Ginger Plum Compote I made the other day, extra sliced plums, banana, golden raisins, a sprinkle of cinnamon, a heaping spoonful of almond butter & a generous drizzle of Tree Hive Maple Syrup + Honey. Just what I needed to get ready for yoga, this morning!
