I made this yummy bowl of oats using the homemade almond milk recipe I created a couple of weeks ago. This nut milk is rich and creamy, and really brought my oats to a whole new level. Just added bananas, strawberries, coconut flakes & cacao nibs. Finished it off with some almond butter and bee pollen. Yum!

Carrot Cake Pancakes w/Cream Cheese Frosting
Happy Easter!! These pancakes were on the menu at our blended family Easter Brunch. I tested out these pancakes on the hubs last week and he loved them ~ they are loaded with shredded carrots, banana, coconut & pecans. I topped them with cream cheese frosting, syrup, more coconut and a Lindt mini chocolate bunny. Yummilicious!
French Toast w/Roasted Strawberries
No April foolin’ around with this French Toast ~ this here is the real deal! Made it with the extra-thick sliced special sour-white loaf (toned down sourdough bread) from my local bakery, The Bread Box. It was then soaked in heavy cream, eggs, cinnamon & vanilla. YASSS! Topped it with fresh whipped cream & Poteet strawberries roasted w/maple syrup, vanilla & thyme. Don’t be an April Fool – make your family this special treat!
Crepes w/ Carmelized Bananas & Almond Butter
These crepes were scary good! I stuffed them with carmelized bananas & almond butter, and topped them with Tree Hive Maple Syrup + Honey, chocolate sauce, cacao nibs & pistachios. Breakfast Tostada
It’s a gorgeous day in San Antonio & this breakfast just shouts GOOD MORNING!!! These BREAKFAST TOSTADOS are our version of toast, around here! I used a blow torch to crisp up these yummy corn tortillas, added some cheese, avocado & a sunny side up egg. Topped it all with pretty watermelon radishes, sprouts, cilantro, tomatillo salsa & Humble House Guajillo & Red Jalapeño Aged Tangy Garlic Sauce.
Marble Rye Toast w/a Sunny Egg, Sprouts & Bacon
Any of y’all still get the paper? There’s just something about enjoying your morning coffee & breakfast w/the smell & feel of a real newspaper. On my Instagram post, someone even suggested it is romantic. I agree! BREAKFAST is SPROUTS, instead of hash browns, 2 slices of BACON, a gorgeous thick slice of TOASTED MARBLE RYE, and a SUNNY SIDE UP EGG topped with RED JALAPEÑO TANGY GARLIC SAUCE (ain’t that a mouthful)! A superior way to start the morning ~ real food & a real newspaper!
Apple Cinnamon Oats
These oats are just what you need on the gorgeous crisp morning! Prepared steel-cut oats according to package directions and added 1/2 of a Granny Smith apple (baked & mashed), 2 TBS Treehive Maple Syrup + Honey & a dash of cinnamon. Topped it all with my homemade & healthyish pecan crumble, hemp seeds, goji berries, crunchy apple slices, maple almond butter, and, what made it really awesome ~ a drizzle of Picnik butter creamer (no sugar, keto friendly). HOW TO for BAKED APPLE & PECAN CRUMBLE is below:
BAKED APPLE ~ Preheat oven to 375 degrees. Line a small pan with foil. Place 1 TBS of coconut oil & a dash of cinnamon on the pan & melt while oven is preheating. Cut apple in half & brush melted oil on all sides of apple. Place apple face down on pan. Bake for 15 minutes or more, until apple is mushy. Scoop out apple & add to oats.
PECAN CRUMBLE: 1 cup rolled oats, 1/4 chopped pecans, 1/2 tsp cinnamon, 1/4 cup brown sugar, 2 TBS coconut oil ~ Place dry ingredients in large bowl & combine. Add the coconut oil & use a fork to mash & mix until the coconut oil is evenly distributed. Put in a small baking dish and bake at 350 degrees for 20 minutes. After 10 minutes, turn the mixture and return to the oven. This is also delicious in baked apples or pears. Cover & keep in the fridge for 2 weeks.
PB & J Loaded Toasts
Aren’t these English Muffin PB&J Loaded Toasts givin’ off an adorable VALENTINE VIBE?! These fab muffins are from one of our local bakeries & the homemade Strawberry Rhubard Jam is all mine! AND, Uh Oh!!!! I’m down to my last jar of Poteet strawberry jam! Thank goodness strawberry season is around the corner! I digress…This simple concoction is topped with fresh & frozen berries and black chia seeds. Only 1 more day & it’s Valentines Day 2019!
Valentine Avocado Toast
Not sure who deserves top billing on this Valentine post… Is it the lovely marble rye from The Bread Box OR the sunny egg OR the heart shaped avo? Either way, treat your sweetie to this lovely breakfast & you’ll get your own star on the Valentine Walk of Fame!
Additional Deets: Toasted a thick slice of Marble Rye bread. Fried the egg in a cute little pan, and I mean little, that makes a perfect circle. Practiced a bunch of times and managed to make an avocado heart. Topped this beauty with thyme and EB seasoning.
Toasted Hibiscus Cream Cheese Bagel w/Honey & Pistachios
Just look at this beautiful toasted plain bagel. It’s schmeared with hibiscus cream (1/4 tsp of Suncore Foods fuchsia hibiscus powder w/1 cup cream cheese), drizzled with honey & chopped pistachios. The strawberries also hit the spot!!! Yummilicious & just right for that someone special on Valentines Day!
