Here’s a little something refreshing to try this weekend! Super simple way to use your winter citrus. I peeled & sliced these lovelies, topped it with some red onions, pistachios, a drizzle of olive oil, and salt & pepper. BAM. DONE.

Baked Potato Wedges
These baked potato wedges are great as a side dish or appetizer. Healthier than fried potatoes, you are going to want to make these again, and again. You can top these potatoes with all kinds of things for variety – I kept these simple with just some sea salt, fresh ground pepper and chopped Italian parsley. I’ve done parmesan cheese or even made them as loaded potato fries with bacon, cheese and sour cream. Any way you choose, these are fab!
Tarragon Hollandaise Sauce or Dip
I know, I know. There’s a lot going on here. But, this post is all about the dip. This has got to be one of my favorite all time sauces. It is so easy, yet everyone will think you are ultra talented! For real! I serve it mostly with beef tenderloin or when making Eggs Benedict. Following a meal at Antoine’s, in New Orleans, I discovered they make a dip from this sauce. Basically, just baking it for 15 minutes at 350. The secret to making a perfect Hollandaise is the blender and hot butter. Enjoy this recipe and your Sunday, y’all!
Hatch Chile & Chicken Casserole
My local grocery store, HEB, has a hatch chile event every year. I tried this rice dish and immediately knew my family would love it. I was not wrong! I have served it with smoked pork loin, brisket and steak – it was a terrific compliment, each time. I’m afraid this deliciousness is going to be a new, frequently asked for item. My son-in-law was like, “Where have you been hiding this one?!” Uh oh, I already have visions of making this over and over. And, don’t be mad – this is definitely not a low cal or healthy dish. It has all the bad stuff. I mean, good stuff. Yikes!
Caprese Salad w/Balsamic Reduction Drizzle & Avocado
Made this Caprese Salad drizzled with a Balsamic Reduction right before my youngest came home for the holidays. Added some avocado, sliced red onion, basil, lots of fresh ground pepper, sea salt & a bit of olive oil. So fresh and delicious!
Cranberry Banana Bread
Merry Christmas! I had a a bunch of leftover cranberries and thought that adding them to some banana bread might be kind of festive. The bread turned out great, and with the sugar glaze and walnuts I added to the top it was extra special. A perfect side to add to my Christmas breakfast!
Spinach & Arugula Salad w/Strawberries, Avocado and Grilled Chicken
Is it ok if I call this Christmas Salad?? It just looks so cheery. in addition to the main ingredients, I added sliced red onion, pecans, and used a blush wine vinaigrette. It was so refreshing on this wet & gloomy day in Texas! It’s a great side, but when you add the grilled chicken it’s a meal! Yummmmm!
Roasted Butternut Squash Kale Sauté
This kale recipe takes this leafy green to whole new level. The balsamic vinegar is the key. Side note about the kale – if you have been following me, you know I bought a big bag of triple washed & prepared kale at the beginning of the week. I got 3 meals out of that sucker! Back to my meal this evening – the hubs grilled a NY strip steak to go with this lovely dish. A perfect combo!
Kale Salad w/Orange Sections, Avocado & Grilled Chicken
My giant bag of kale has been put to good use! This salad has orange sections, persimmon, avocado, crushed walnuts and grilled chicken. I dressed the kale with a Tahini Vinaigrette (tahini, olive oil, white wine vinegar, 1 crushed garlic clove & sriracha) when I got home, and then prepared the add ins ~ makes the kale nice & tender. I feel super healthy!
Kale with Carmelized Onions & Red Lentils
This is a yummy side or main dish. I served this with grilled chicken (Thanks Hubs!) & jalapeño naan that I got from our local grocery store. Gotta say…this was both healthy & delish! Feeling great already!
