I just love this galette. I made it a few weeks ago when we had friends over. They were so impressed! The dough I use is so flaky and the fruit tastes just sweet enough, but not too sweet. It is sooooo satisfying. And, it looks beautiful. Oh, and I love the crunch of the sliced almonds.
Ingredients
- 1 HEB Texas Pie Company Original Pie Dough Puck at room temperature, or your favorite pie dough
- 2 large peaches slices about 1/4 of an inch in thickness
- 1/4 cup blueberries
- 1/4 cup brown sugar
- 1 TBS flour
- 1 egg for egg wash
- 1/4 cup sliced almonds optional
Instructions
- Preheat oven to 400 F degrees
- Line a baking sheet with parchment paper
- In a bowl, toss the peaches, blueberries, sugar and flour together
- On a floured work surface, roll the dough out into a 12-14 inch round. Transfer to prepared baking sheet.
- Arrange the peach mixture over the dough, leaving a 2-inch border. Fold the border over the filling, pleating the edge to make it fit. The center will be open. ~ Brush crust with egg yolk and sprinkle with almonds and sugar.
- Bake for about 45 minutes or until golden brown.
