Valentine Avocado Toast

Valentine Avocado Toast

BREAKFAST

Not sure who deserves top billing on this Valentine post… Is it the lovely marble rye from The Bread Box OR the sunny egg OR the heart shaped avo? Either way, treat your sweetie to this lovely breakfast & you’ll get your own star on the Valentine Walk of Fame!

Additional Deets: Toasted a thick slice of Marble Rye bread. Fried the egg in a cute little pan, and I mean little, that makes a perfect circle. Practiced a bunch of times and managed to make an avocado heart. Topped this beauty with thyme and EB seasoning.

English Muffin Mini Pizzas

English Muffin Mini Pizzas

ENTREES

Nothing fancy about English muffin mini pizzas, EXCEPT when the muffins come from one of the best bakeries in our city! The Bread Box makes the most beautiful, tasty breads & sweets. And, these traditional muffins were no exception – light and buttery! I added a little marinara, shaved ham & shredded mozzarella, along with a few other things. See the recipe for all the deets. Hubs really enjoyed these tasty little treats!

Baked Potato Wedges

Baked Potato Wedges

SIDES

These baked potato wedges are great as a side dish or appetizer. Healthier than fried potatoes, you are going to want to make these again, and again. You can top these potatoes with all kinds of things for variety – I kept these simple with just some sea salt, fresh ground pepper and chopped Italian parsley. I’ve done parmesan cheese or even made them as loaded potato fries with bacon, cheese and sour cream. Any way you choose, these are fab!

Tarragon Hollandaise Sauce or Dip

Tarragon Hollandaise Sauce or Dip

SIDES

I know, I know. There’s a lot going on here. But, this post is all about the dip. This has got to be one of my favorite all time sauces. It is so easy, yet everyone will think you are ultra talented! For real! I serve it mostly with beef tenderloin or when making Eggs Benedict. Following a meal at Antoine’s, in New Orleans, I discovered they make a dip from this sauce. Basically, just baking it for 15 minutes at 350. The secret to making a perfect Hollandaise is the blender and hot butter. Enjoy this recipe and your Sunday, y’all!

Double Chocolate Brownies

Double Chocolate Brownies

DESSERTS

DOUBLE CHOCOLATE BROWNIES on deck! These are the moistiest (not a typo) & fudgiest bars ever, and an absolute must for your valentine baking! Don’t you just L O V E the chocolate drizzle & salt flakes. I also make these with a white chocolate drizzle and rose petals. Use your imagination for inventive toppings, but…Use. This. Recipe. It’s so gooood! I used Hershey’s cocoa & semi-sweet chocolate chips to make these irresistible chocolate treats! Mailed half to my niece and sent the rest to my hubs work – had to get them out of the house and away from my tummy! These guys are addictive!

Today, it’s PINK HIBISCUS PORRIDGE made with steel cut oats, Suncore Foods fuchsia hibiscus super juice powder and coconut yogurt. I topped it with frozen raspberries, coconut flakes, sliced almonds, hemp seeds, rose petals, and a heaping spoonful of maple almond butter! YOU WILL LOVE THIS!

Sweet Potato Toasts

Sweet Potato Toasts

ENTREES

These dinner toasts are delish! I baked the sweet potato in the oven at 450 degrees, but not until it was mushy. Then I refrigerated it, so it would be easy to slice. Once sliced, I put a little olive oil and placed them on a prepared pan and toasted. The first toast has tahini, greens, sautéed mushrooms & garlic, goat cheese, crunchy chick peas & sea salt. The second toast has greens, avocado, a sunny side up egg & EB seasoningYummy & super easy!!!

Sweet Potato Porridge w/ Bananas, Pecan Crumble & Maple Almond Butter

BREAKFAST

I bought this huge sweet potato this weekend & I made this yummy oatmeal & loaded toasts (posting about those tomorrow). Anyway, I made this with steel-cut oats with half water/half almond milk, sea salt & about 2 TBS Tree Hive Maple Syrup + Honey. When it was almost done I added in 1 cup of mashed sweet potato. I topped with maple almond butter, chia seeds & homemade pecan crumble.
