I used French sourdough for these open-faced treats! For the tuna, I mixed albacore tuna, mayo, hard boiled eggs, squeeze of lemon, minced celery hearts & onion, julienned carrots, a touch of mustard & chopped dill. Completed this yumminess w/some peppery arugula & a few more carrots!!!

I love to get inspiration from Instagram and Pinterest. The savory oats @clemfoodie posted a few days ago made my mouth water! So, here is my version of SAVORY PORRIDGE w/GREENS, AVOCADO & a 7-MINUTE EGG. It turned out so creamy, and was satisfying enough for dinner. The hubs loved it, and hubs is not the biggest fan of oatmeal. I think I have a convert!

I looooove it when my son visits, but y’all…T H E  E A T I N G. This CHEESEBURGER was definitely an indulgence. My hubs always makes his burgers with @heb Prime Brisket, and they are GOOD! A burger is only as good as the patty!!! And yes, we like good, old fashioned @kraft American cheese singles, lettuce, tomato, avocado, sliced red onion & mayo on our burgers. I’m telling myself the oven baked sweet potato fries were healthy.

Sweet Potato Fries ~ Slice potatoes into strips. Place on pan you have lined with foil and parchment paper for easy clean up. Spread cut fries evenly in the pan. Drizzle with olive oil and season with sea salt and pepper. Bake at 450 degrees for 15 – 20 minutes. Fries are done when you can pierce the potatoes with a fork and slightly brown.

Freezer food is yummy! My hubs made a fantastic brisket a while back, but it was just too much to finish. In my effort to be less wasteful, I froze the leftovers. I was so excited when I pulled it out, chopped it up & heated it in a skillet w/a bit of BBQ sauce. Sooooo good ~ served it on a toasted bun, avocado, sliced red onion & a fried egg!🍳🥑🥖 I’m motivated! Reduce food waster & use all your leftovers!

We are still suffering from cedar fever over here, so I immediately thought of this Moroccon soup. I recently had a version of this brothy loveliness at a cute little restaurant up in Blanco, Tx. I did some research and “HARIRA” is a traditional SPICY MOROCCAN SOUP served to break a period fasting. I’m serving it to get us well, plus I just love lentils!!!! I also added grilled chicken sausage (Thanks hubs!)

Christmas & New Year’s Eve would not be the same without Cheese Enchiladas Con Papitas (with potatoes). They are really easy to make & are sooooo delicious! I serve them with avocado & cilantro. Add some Mexican rice and beans, or serve as is. I served them w/ tamales on the side, but that’s just what we do here is SATX. Happy holidays y’all! 

A couple of things that I do that I feel helps out with the calories and makes these easier to make…. For one, I use cooking spray to soften and heat the corn tortilla, instead of heating oil and dipping each tortilla. That is labor intensive & adds a ton of calories. So unnecessary! I also doctor up canned enchilada sauce – you really can’t go wrong and it is a lot less work. And, honestly, more delicious!

Merry Toast Tuesday! How ‘bout these LOADED TOASTS?! Blistered toms, mozzarella, avocado & sliced red onion on olive oil & garlic brushed @broadwaydailybread sourdough. A little fresh basil, drizzle of EVOO, EB seasoning, ground pepper & red pepper flakes complete this festive Toast Tuesday dinner!

I’m really loving this baked penne pasta. I tweaked an Ina Garten recipe I found on Food Network and it’s soooooo good! My family is not crazy about parmesan cheese or yogurt, which is in the original recipe. So, I reduced the amount of parmesan and used ricotta, instead. I also added shredded mozzarella cheese, because we love cheese!!! My granddaughter loves this stuff and asks for it all the time! Oh, and for your reference I included the link to the original recipe. Enjoy!
