The Poteet Strawberry Festival is this weekend & I’m dedicating the rest of the week to this small town’s award winning berries! I mean, I’ve got to because last week I bought a flat. And, in case you’re not up on your agricultural measurements a flat equals 12 pints (or hallocks) of strawberries. We ate this yummy galette, but the rest of the yummies I’m posting this week went to my hub’s & daughter’s work. Lawd, that was a lot of strawberries.

No April foolin’ around with this French Toast ~ this here is the real deal! Made it with the extra-thick sliced special sour-white loaf (toned down sourdough bread) from my local bakery, The Bread Box. It was then soaked in heavy cream, eggs, cinnamon & vanilla. YASSS! Topped it with fresh whipped cream & Poteet strawberries roasted w/maple syrup, vanilla & thyme. Don’t be an April Fool – make your family this special treat!

We had a quiet Saturday evening ~ I finished baking the flat of Poteet strawberries I purchased this past Tuesday. The hubs cracked open a bottle of cab and grilled these thick slices of ciabatta from one of our local bakeries, The Bread Box. I made this gorgeous spread w/tahini, lemon juice & roasted garlic. Y’all, this ciabatta was crispy on the outside & super moist on the inside ~ perfect brushed w/olive oil & toasted on a hot grill. I got the recipe for this spread from https://www.ful-filled.com

I have been making this easy, yet showy dessert for years. And, every time I make it I have to pinch myself when I think about how effortless it is to prepare. Seriously, one of my fav desserts for a dinner party. You can make it a day ahead, which is really the most awesome part! I use store bought lemon curd. And, before you say anything, just know they sell a ton of quality options! I’m all about the convenience, especially when someone has already done the hard work for you! Enjoy!

Isn’t this the most vibrant dish? This is one of the side dishes I served with the Asian Anticuchos I posted about a week or so ago. It was so great with those beef kabobs. Plus, I just love the  little crunch bok choy has. And, BONUS: It’s easy, super healthy & flavorful!

Spring is here & so is my craving for crisp white wine! One of the things I told myself after my little battle with cancer was that I would never drink another bad wine. Well, this Bending Branch Winery 2017 Vermentino Sonoma, Los Carneros is one you need to try. The vermentino grape is popular in Italy with minerality & high acidity that cleanses your palate. This also makes it a great wine to enjoy with fish, or a light salad. I like to drink this wine while chillin’ in my Queen of Love chairs on my back porch! My hubs calls these chairs “our thrones.”

This has to be one of my favorite bowls. We fried up small cubes of smoked pork belly we had in the freezer. You can find the info on how we made our pork belly here: Smoked Pork Belly  I then prepared my famous fried rice (that’s what I call it!). You can find that recipe here: Asian Rice Bowl

I tossed the fried pork belly pieces in hoisin sauce. I built the bowl by first adding the fried rice and some grilled pineapple chunks, added the fried pork belly on the side, a 7 minute egg and some cucumber. Topped it all with some cilantro and red pepper flakes. It was delish!

We prepared this pork belly for the first time a week ago. It was fantastic. Tender, savory & luscious. The day we made it we sliced several pieces and cut them into bite size pieces. Because it was a fairly large piece of meat, we refrigerated it and then sliced it into various sizes. Some in a small slab you could fry up for toast and others in chunks to fry up for tacos. So far, we have made pork belly fried rice, tacos, avocado toast with a small slab and pork belly sliders. Everyone has raved about it!

Its almost St. Patty’s Day & I found the perfect cake to celebrate all things Irish in style! I found this recipe on Instagram at “katiebird bakes.” I checked out the ingredients and was intrigued – Guinness dark beer & olive oil…hmmmmm. I had to try it! It did not disappoint! The cake is very moist, even though it has no eggs in it. The flavor is outstanding & the frosting…well, let’s just say I could have eaten a bowl of that fluffy, Irish Cream flavored, yumminess all by itself. The link to the recipe is below.

Makin’ a fashion statement, today! First, aren’t these lattes beautiful! Second, I’ve lost 4 lbs (in 12 days) drinking this soothing concoction. Ok, and cutting back on the food & wine intake. Third, it’s widely documented that “golden milk” aids in digestion & breaking down fat, AND assists in stopping the spread of cancer (and I’ll take all the help I can take in that area). So, there ya have it ~ beauty & health! Who woulda thunk it! Recipe & photo styling inspiration from Two Spoons Blog www.twospoons.ca ~ I made several tweaks to the recipe to suit my taste.
